Gluten consists of proteins found in grains such as wheat, rye and spelt. The inside of the small intestine is lined with cells that form small projections. These projections are called villi. Together, the villi create a large surface area and absorb vitamins, sugars and other nutrients that pass through the small intestine.<\/p>\n<p>If you have gluten intolerance or celiac disease, eating foods containing gluten causes an abnormal immune response. The body mistakes gluten for a bacterium and then tries to attack it. Not only is the immune system occupied by the response to gluten, but the villi of the small intestine are also affected. The intestinal villi can become flattened, reducing the total surface area of the small intestine and making it harder to absorb nutrients. Especially in children with gluten intolerance, the ability of the intestinal cells to absorb food, vitamins and minerals decreases. Adults with gluten intolerance or celiac disease can also experience other symptoms.[\/vc_column_text][\/vc_column][\/vc_row][vc_row el_class=&#8221;bullet_blue&#8221;][vc_column][vc_column_text]\n<h2>The importance of diagnosing gluten intolerance or celiac disease<\/h2>\n[\/vc_column_text][vc_row_inner][vc_column_inner width=&#8221;2\/3&#8243;][vc_column_text]If you do not tolerate bread well, gluten intolerance or celiac disease may be the cause. However, gluten intolerance or celiac disease occurs in only 1% of the population, while possibly 10% of the population experiences symptoms from eating bread. The cause may be a wheat allergy or starch intolerance. Because people with gluten intolerance or celiac disease must avoid gluten for life, it is important to establish the correct diagnosis. The likelihood of celiac disease is then five times higher than average.<\/li>\n<li>Celiac disease occurs in your family. The likelihood of celiac disease is then five to ten times higher.<\/li>\n<li>If, as a child, you already had low resistance, caught colds easily, had a slight build, often had abdominal pain, or had anemia, the likelihood of celiac disease is greatly increased.<\/li>\n<li>Although the disease can manifest at any age, a bacterial infection, for example with Campylobacter, can sometimes trigger the onset of the disease.<\/li>\n<li>People with lactose intolerance, chronic gastrointestinal symptoms, low sIgA levels and Crohn&#8217;s disease have an increased likelihood of celiac disease or gluten intolerance.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text]\n<h2>Diagnosing gluten intolerance or celiac disease<\/h2>\n<p>A diagnosis of celiac disease cannot be made by looking only at antibody levels. To establish a correct diagnosis, the following should also be considered:<\/p>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>The results of an sIgA test, because a low sIgA level is associated with lower antibody levels.<\/li>\n<li>The antibody test is not very sensitive, which means that not everyone with gluten intolerance produces these antibodies.<\/li>\n<li>Antibodies are often present in greater numbers in stool than in blood. High levels in stool alone do not prove gluten intolerance.<\/li>\n<li>If high antibody levels are also found in the blood, an internal examination should be performed. If the antibody levels are not elevated, a doctor will be less likely to refer the patient for a biopsy. However, it is also important to consider the symptoms, because some people with celiac disease do not have high antibody levels. A tube is passed through the stomach; this is called a gastroscopy. During the examination, small pieces of tissue are removed. This is called a biopsy. The tissue samples are then examined under a microscope.<br \/>\nIn the biopsy, a doctor can identify specific features of celiac disease. In children, the intestinal villi are more often flattened and the diagnosis is easier to establish. In adults, villous atrophy is usually not present, and the number of white blood cells in the epithelial layer is assessed instead. An increase in the number of white blood cells (lymphocytes) in the epithelial layer, known as intraepithelial lymphocytes, indicates gluten intolerance.<\/p>\n<p>To determine whether or not someone has celiac disease, that person must have consumed gluten regularly for at least 2.5 months before the internal examination. People who want certainty about their situation are therefore better advised to have testing for gluten intolerance before starting a gluten-free diet.[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text]\n<h2>Treatment of gluten intolerance or celiac disease<\/h2>\n<p>There is no treatment for celiac disease; the only solution is a strict gluten-free diet. People with celiac disease must avoid gluten for the rest of their lives. This means not only avoiding bread that contains gluten, but also many packaged foods. Many products, such as processed meats, mayonnaise and soy sauce, also contain gluten. Someone with celiac disease should therefore always read the packaging carefully. Gluten-free products often have a special symbol indicating that the product contains no gluten.<\/p>\n<p>A person with celiac disease only needs to eat gluten once for an autoimmune response to be triggered in the small intestine, and this response may take several weeks to subside.
